My Maid of Honor wants to give me a Bachelorette party. Only thing is..she had made some pretty extravagent plans that I am not comfortable with. How do I politely ask her to "tone down" some of her plans without hurting her feelings?

I find that it is best to be honest. Try to have some private time with her and tell her what you have said here, that you would rather have a quieter evening.
