I had asked my best friend to be my matron of honor for my wedding. When asked she agreed but showed no emotion whatsoever. Almost as if she expected that it would be no one other than her. So far I have received more support form 2 of my bridesmaids. One has offered a great deal of help which I refuse to take because she has 3 children of her own and I don't want to put too much on her plate. One of my other bridesmaids has done everything in her power to help me make my day go smoothly and the way that I want it. What my matron of honor should be doing. It's not like I'm asking for the world here. Just some help. My matron of honor's first duty, which was a test in my eyes, was to see her relilability. She to be at my home by 5pm one night to help me prepare dinner. We were having our parents meet and wanted everything to go smoothly. Not only did she NOT show up when she said she would but she didn't help either. She rolled her eyes at my fiance when she was asked to put two bottles of wine on the table. When dress shopping for my bridal gown I made an appointment for my girls to come back to try some dresses on and I quote my matron of honor " I think that I should have the nice expensive dress. Everyone else can get something from JC Penny. I have to outshine everyone." If I'm not mistaken the only two people who should outshine anything are me and my groom. So with all this said would it be wrong of me to ask her to step down? She has shown no interest in helping me and I definitely feel some jealously. The last thing I want on my wedding day if for her to try to upstage our ceremony. That is not what a wedding should be about. If all of this is in just cause how do I ask her to step down? I appreciate your advice.

First of all, I feel that must address you asking your friend to help you prepare a dinner for your parents. This isn't the MOH's responsibility, nor is it polite to ask anyone to help you with this task.
It is completely your choice to ask her to step down, but it could be the end of your relationship. So, think about it sincerely before saying anything. However, she really hasn't done anything so severe to ask her to step down. Her comment was inappropriate, but she could have been joking. No one is inside her head. Perhaps it would be best to speak to her about it.
It is your choice of which road to take at this point.

We were having a dinner so that my parents and the grooms parents as well as the matron of honor and best man could all get acquainted. SHE offered her help and then didn't!!So how is that NOT POLITE?!

Please follow proper posting rules, no ALL CAPS and no excessive use of punctuation.
This is not only important because improper spelling, grammar and punctuation can give a bad impression of you, it is also important for conveying the message properly. Posts with no full stops or commas, too many exclamation points and question marks are difficult to read and can sometimes even change the meaning of the post. ALL CAPS is read as telling.
