Hi, I am the MOH at my brother's destination wedding in May. We will be spending a week in Mexico with my family and his close friends. Am I expected to pay for my date's accomodations package (all inclusive) for the week or just for the wedding gift?

You are expected to pay for you date's travel and accommodations. The couple actually only needs to pay for the basic dates that you are required to be there (usually the night of the rehearsal and the night of the wedding) - although they might have extended a "better" offer to you. Your date, though, is your (financial) responsibility.
Additionally, keep in mind that by custom you may have to contribute to (or even offer to throw) any showers that may be held in the bride's honor, if they are appropriate. You may also be responsible for your own dress, formalwear etc. Sometimes couples, who are able, offer to cover some or all of the expenses that are involved (like dresses), but it should not be assumed. I absolutely agree that if you 'invite' you pay, which applies to your date. And, I agree that by custom the attendants host showers, but it is an option and all would have to agree to host and to the budget of the party. Rebecca Black, Etiquette Now
