When we have the Convalidation ceremony, will we be saying vows and exchanging rings again, just like when we were married, even if it's the same rings we used at that time?

Particulars of convalidation ceremonies vary from diocese to diocese, depending on how the individual bishops interpret the details involved.
You will be repeating the vows proscribed under canon law, which are the actual vows spoken at Catholic weddings. As to the exchange of rings, there is some variation. Some parishes have the ring exchange with new or original rings and others have the original rings blessed by the priest while the rings remain on the fingers of the spouses.
