First of all I must say that this site has many helpful questions and answers on planning the perfect, yet appropriate ceremony.
My question today is about the exchanging of new rings during our 10 year vow renewal ceremony. I would love to have our new sets engraved with something, what would be appropriate? Should be put our original wedding date, our vow renewal date, or the original date and the vow renewal date?
Any advice would be greatly appreciated. Thanks again for all your responses.

Your new rings can be engraved with whatever you choose. This is very much a personal decision. Though, if it were me, I'd probably engrave the vows I chose for the renewal ceremony. See these engraved wedding bands for ideas. But the vow renewal date works - it's just not very special.
