My husband and I will be renewing our vows on our 25th anniversary in a few months. We have figured out everything but the rings. My kids are all grown (25-19) and I have never gotten a mother's ring. My husband says he thinks it would be special for us to exchange mother's and father's rings at the ceremony. The idea sounds wonderful to me. I'm just not sure about the appropriateness of this and on which hand do we wear these rings (I assume the right hand).

It sounds like you two really understand what this ceremony is supposed to be about. Bravo.
Since these rings are not wedding rings, but symbols of your love and family, it doesn't matter what finger you wear these on. And, these are very appropriate symbols to exchange for your vow renewal.

After you exchange wedding vows and wedding rings, you may then place the mother/father rings on your right hands with some appropriate words: "And please accept this token of gratitude for your years of love and devotion to our beautiful children." If Dad really wants to be romantic, he may then kiss your hand.
