We are planning the vow renewal and also want a grand celebration with our friends and family.
However, we want to do a Sunrise vow renewal on the beach...and want the celebration later that evening so that we can include dancing and evening fun.
How should I word this on the invitations?

Dear Renewing,
It wouldn't be a good idea to invite your guests to a morning renewal and have them wait until the evening to party. For those who travel, what would they do all day?
If you want to simply invite guests to a party later to celebrate your renewal, invite them to a celebration to celebrate your renewal. These do not have to be formal especially since this is not a blessing of the church.
Simple wording could be: Mr. and Mrs. Judy and James Smith invite you to join us to celebrate our vow renewal...

So you don't think anyone would be insulted not to be invited to the renewal? Should I give them the option?

Actually that is a great idea. You could just give them the option.

Would I make it an invite 1st to the reception and then add if you wish to join us in our sunrise ceremony please be there at ___hr. Or do you have a better option?

You have very good ideas. That would be best so the guest doesn't feel as if he or she must be there for the renewal. Word it informally and as you would speak verbally to them.
