second wedding gifts and dress trains

My Italian mother is getting married for the second time and she is in her 50's. She is having an informal backyard wedding starting at 7pm. The ceremony is at sunset around 8:30 pm. There is no sitdown dinner but Italian breads, cheeses, cold cut type meats and several different green and other salads will be served prior to the ceremony. Wine, beer, water, and lemonade will be served with a champagne toast after the ceremony. Italian cream puffs will be arranged instead of a cake. First question is should she cut the train off her dress, which is fairly formal? Second, her cousin mentioned to me that it was not proper etiquette to have not listed "no gifts" on the invitation. From what I understand it is not proper etiquette to write anything on the invitations about gifts at all even if saying "no gifts". Is that correct? Also, if she registered is it okay to send a registry card in with the invitation, if not, when is the proper time to send-especially if she is not having a shower? Should she only use word of mouth?
