Our wedding is at 11 am on a Sunday morning in August, with a "garden theme" semi-formal feel and 5 groomsmen. I'm the bride, and from my reading (here, magazines, wikipedia, etc.) a stroller sounds like just the right thing. The groom is totally on board with this plan.
However, these don't seem that common (from browsing rental websites) and they are often seem to be called a "stroller tuxedo." I think this terminology is incorrect, but oh well.
Some of the stroller outfits have striped pants (which I like), dark grey jacket (nice), pale gray vest (nice) and then various shirts and ties which may or may not be as nice.
My question is: what exactly defines a stroller? If we rent the jacket and pants only, say, could we put any shirt/tie/vest with it? Or is there a full ensemble that goes together for it to be an appropriate outfit?
How much customizing can we do before it stops being a stroller? (Seems like with tuxes you can do almost anything and still call it it tux)

Yes, the stroller would be great. Some call it a stroller tux because it could be viewed as a daytime version of a tux. The cutaway is even more formal though. The stroller is also called a sack suit.
I'm not really an expert in men's clothing, but I can tell you that the jacket is looser in appearance than a tux. The shirt is less stiff and a four-in-hand tie is usually worn. I wouldn't mess with the type of tie. I'm not sure about your other questions, so you may have to find someone who knows more about men's clothing.
