My fiance and I are having a beach wedding and plan to use the unity sand instead of the unity candle. In the program, how do we word it for when the mothers pour sand into the respective family vases? We plan to write "Unity Sand Ceremony" in the program for when my fiance and I pour the two into one.

You won't have to spell out and describe the entire ceremony. Simply write Unity Sand Ceremony and the names of the participants.
