I am not interested in being "given away" by my father. I would really like to walk down the aisle by myself, or perhaps have my father walk me down the aisle, but then have him quietly take his seat without having any mention of "who give's away the bride" or anything to that effect. Would this be appropriate?

Not to worry. No one is given away anyway. You do not need anyone to escort you if you don't want it. The great thing about today's wedding etiquette is that we can choose who escorts us if we want an escort.

Either way is very appropriate. Of the hundreds and hundreds of weddings I have officiated, I have never asked "Who gives this bride to be married?" Though I know it is still done.
Having your Dad walk you down the aisle is an honor YOUgive to your Dad, symbolic of a passage even.
My suggestion would be for you to do it the way you feel most comfortable and the way that would honor your father.
