     Out of Town guests/relatives for pre-wedding festivities and dinner (not rehearsal)  

The rehearsal dinner is on Thursday night for our wedding party, but many of our guests will arrive from out of town (from across the country). The wedding is on Sunday. Are the bride and groom responsible for paying for dinners and festivities on Friday and Saturday?

No, you are only responsible for the rehearsal dinner (groom's family) and the reception for guests. If attendants will be arriving on Thursday also, you would want to provide for them.
