fresh flowers vs. dried lavender, seeded eucalyptus, heather
I am thinking maybe using lavender, seeded eucalyptus and heather for my bouquets , or maybe just bunches of lavender, would a dried bouquet look ok? does heather dry well? what would lavender and hydrangeas look like together?

All good questions....
Fresh lavender is available only in the peak of summer as a general rule. As far as using dried lavender, it is lovely, but be prepared for it to shed all over everything. The same is true for heather although it is more widely available . It's peak seasons are more like spring and winter although you can probably special order it for summer. Dried flowers in Chinese culture are symbolic of passing or finished and a bad omen for a wedding. Believe whatever you want but that is a reason I might use to go for fresh flowers vs dried. Fresh flowers symbolize a fresh new begining, new life, new couple, marriage, start, etc...(just an opinion on my part!) All that said, seeded eucalyptus is great, always available and your idea sounds just beautiful. There are options within that look and feel all year round and a good floral shop should be able to guide you to peak seasonal alternatives to the dried flowers if you need them. There are lots of georgeous herbals. Sometimes their seasons are short but be open and you will get what you are looking for. As far as the hydrangeas go, I think they would look great and give you a nice large focal area. They are now available year round and in all sorts of beautiful shades of color. If herbal scent is part of what you seek, consider these as well. Scented geranium leaves to back the bouquet, freesia, rosemary and sweet peas....All available most of the time by special order and lovley. Go, lavender lover, and good luck!!!!!
