What's appropriate for a gift when a widowed parent (father-in-law in this case) remarries? We're not close to my husband's family, but his father informed him that he will be the best man so we're stuck attending whether we want to or not. We're supposedly going to meet his fiancee for the first time less than 2 months before the wedding. Since I doubt that they'll tell us they don't want gifts, what's appropriate? Price guidelines?

Your husband will be the bestman and he is not close with his father? Hmmmm....that sounds like w hole other question and you haven't asked about that, have you?
Gifts should never be selected by the price tag. What you spend should reflect your feelings for the recipient and in keeping to your budget. I would suggest some sort of keepsake such as a picture frame or photo album but your husband should pick something with his father in mind.
