I have read that it is proper etiquette to send out thank you cards right away for gifts received before the wedding. Should we also be cashing the checks we are receiving early and sending thank you notes for those as well before the wedding? Also, our thank you cards have our new last name on them. Should we go out and buy other generic thank you cards for these early gift givers on can we send out the thank you cards we had made with our new last name?

Yes, you can cash the checks. People prefer to balance their check books and outstanding checks can mess up the books. But, do not spend any of the money until after the wedding--big no-no. If anything happens and the wedding does not take place, you must return it all. So, this is very important. This is why we never use any of the gifts before the wedding as well.
It would be best to write the thank you notes out now with generic cards or paper.
