Now that we're married his mother gave us a cheese tray for a wedding gift. Do I send somebody as close as his mother a thank you note? It just seems so formal but I guess being polite is being polite no matter who it's to.

If the gift was personally handed to you and opened in your mother-in-law's presence then a formal, written thank you note is not needed; your verbal thanks is enough. If you'd like to send a note after that would be nice but not necessary.
