I have already sent my invitations & they are due back form my guests by 05/26. But I did not send one to the clergyman performing the ceremony. We barely know him & I know it is correct etiquette to invite him to the ceremony but we were not sure if we should initially. We have decided to invite & I'm just not sure how to do that. Do I send him an invitation this weekend & giving him until 06/05 to respond? Do I also give him the guest option or just invite him?

Yes, you should formally invite him and include a guest. We really are only obligated to allow our guests to bring a guest when they are in a relationship. But, you don't know this person well. So, it is probably best to just assume he/she is with someone. If you asked, it may be awkward. Plus, it is just one more person. Rebecca Black, Etiquette Now
