Ideas for times & reception food

We are having our wedding September 3, 2005 in Mississippi. We will have it outdoors and want to have it at sunset which will begin at 7:18 p.m., so what time should the wedding begin? 7:00 or 7:30. We will have close friends and family no more than 150. Since we are having it so late what type of food should we serve: heavy hors d'oeuvres or a meal. We are trying to do a lot of the work ourselves to save money. We are going to the gulf to get shrimp straight off the boats. Please help!

Hello,

I would recommend having your wedding at 7:00 p.m. This will leave sufficient daylight to take any outside photos desired. Since the wedding is so late, guests should be served a seated meal.
