My cousin just got married to one of my friends May 17th of this year. However, I have been planing to have a wedding May 17th of next year. My fiance and I chose this date because it is the Sunday of the long weekend, and we have a lot of family coming from out of town. I don't want to take away from my cousin's and friend's one year anniversary, however, this is the date the works for me. Would it be acceptable to have the wedding that day and take the time to honour their anniversary by announcing it at the reception?

There is nothing wrong about hosting your wedding on this date. If you do mention their anniversary, it should be just a short speech. There may be hurt feelings though. There may be a few people celebrating their own anniversaries that day. So, singling one out might not be the best idea. Perhaps to say something like, "Let's toast to all those celebrating their anniversaries today, like ... " would be best.
