     2 Hr Appetizer Only Reception

Our reception will be a 2 hour no dancing mostly mingling event held in the church reception area. Guests no more than 75 including the bridal party. Stationary appetizers will be fruit, veggies, cheese, sweet n sour meatballs and deviled eggs. "Passed" will be mini crabcakes, firecracker shrimp, chicken and beef skewers and potstickers. The guest tables are rectangle 30W X 72L and will seat 8 people. The caterer is providing a head server and 2 assistants. Question. Will it be better to have a tray prepared for each table with the stationary appetizers so that folks aren't getting in the way of the servers doing the "passed" appetizers? I need a good suggestion for this set up. Keeping in mind that most of our guests are older which is why tables will be set up. I also like the idea of "passed" appetizers as it controls costs, another reason why I don't want it set up like a buffet. Help!

The stationary appetizers will be on a display buffet automatically...if your goal is to get people mingling, I wouldn't seat them at tables and have the appetizers there. Then you would have the waiters serving the tables instead of passing through with appetizers if everyone is seated.
