We are having a small catered reception. As it is out at a resort in an area with no kitchen facilities and no electricity, I could not think of a way to give several choices, as I have experienced at many plated sit-down receptions.
My MOH suggested we put a choice card with RSVP. Is this Okay, as opposed to selecting a generic meal for all? Or, would a buffet be best?

Requesting a meal choice isn't exactly the most proper, but most etiquette professionals realize that it is necessary in many cases and don't have a problem with it. Plus, as long as your wedding is not very formal, it is fine.
I'm sorry that I can't comment on the buffet vs a sit down meal, as I'm not a planner.
