Unknown number of guests and booking a reception site

My fiance and I are getting married in Ohio (where we live) but both of our families are from Colorado. We're inviting 120 guests to the wedding, most of them from Colorado. While we would love everyone to attend, we're anticipating only about 40-50 people will make the trip for various reasons. My question is, how do I go about deciding on and booking a reception site and catering? I don't want to plan on 50 guests and then not have enough room if more want to attend, but then again I don't want to book a location for 100 people only to have 40 show up and the place to look empty. Should I send out invitations really early (like 6 months in advance) in order to get an accurate guest count before booking my venue? Or send out save the date cards and ask people to reply if they are considering attending? Or wait to book the venue until closer to the date? Any advice would be greatly appreciated!
