Wedding Gratuity for Caterer and Serving Staff

My caterer is providing the kitchen staff and servers. The chef's are getting $25 per hour (10 hours) and the wait staff is getting $18 per hour (10 hours). On my proposal there is no amount listed for gratuity or service charge. The per hour rates seems generous but should additional gratuity be added?

Dear Mcarbin,

Gratuity is optional and unnecessary. But, if you feel they offered service above and beyond, then you could give them a tip. It is your choice.

Best wishes,
