     appetizer buffet station or served buffet for wedding with up to 200 guests  

I'm in the beginning stages of planning my wedding and reality hit me when it came to the pricing of everything. My fiance and I can not decide on whether or not to have our appetizers at a station or for someone to come around with a tray serving them to our guests.

We intend on having a formal sit down dinner for between 100-200 people. My thought is that serving our guest on a tray would cut down on feeding cost his concern was that it might leave our guest hungry.

Which is the better option - served appetizers or buffet style?

A good compromise is a few butler-passed hors d'oeuvres combined with a station of crowd pleasers (but less expensive items). For example, have a couple of premium items passed (bacon-wrapped scallops, mini crab cakes) but also have a cheese or crudite station (crudite = cold vegetables with dips, crackers, etc.). The "grazing" station will keep people from getting too hungry, but the butlers can keep the quantity of premium items down as well.
