     Two Wedding Officiants - Who Will Say Blessing Before Meal  

The officiant of my daughter's wedding told us that he would not be able to stay for the reception so I asked a guest who is also a Deacon to say the blessing before dinner and he said he would love to. The officiant later called to say that his plans had changed and now he will stay for dinner. Should I call the guest to cancel or tell the officiant we have asked someone else?

I think your officiant will understand that you chose someone else who is meaningful and spiritual, and that he has switched his reponses. I would leave it as-is.
