Renewing Our Vows After Almost Getting Divorced

My husband & I have been married nearly 7 years. At the end of last year we were very close to ending our 10 year relationship. We reconciled & since then, everything has been better than ever.
Because we were so close to divorce, and most importantly, because we overcame it, we want to recommit to one another during a vow renewal ceremony when we go to Jamaica at the beginning of April.
Having never been to a vow renewal ceremony, and having only read a little bit about the etiquette, I was wondering if you could share a little more information. Here's what I do know:
1. An officiant is not required since we are already legally married.
2. It can be a huge event or a small personal one. (The small personal one is more my cup of tea & it will just be us.)
3. There are not any other rules, but rather, what we prefer or envision.
We want the ceremony to be just us on the beach, both barefoot. We want to have a person leading and another videotaping and/or taking pictures; very small and intimate.
We want to write our own vows and, believe it or not, I am having difficulty doing so. Do you have any suggestions on the ceremony itself, or on the vows? I'm totally at a loss for words and, I'm sure by reading, you can tell that doesn't happen too often! lol
