I'm the bride and I'm doing my own flowers and decorations to save $$$. My problem is, I don't want to be running around fixing decorations before the ceremony. But...I don't know anyone with a proper eye for detail that can pitch in.
Would it be lame to ask some friends and family to form a "decorations committee" so I can explain what I want? Who else could I ask/hire to place my decorations? The caterer or waitstaff? If I had a wedding coordinator, would she/he do that?
Just wondering what my options are.

I always advise against doing your own flowers or food arrangements. The idea of worrying with those details on your wedding day is not what you want to remember. I suggest that you speak with your caterer to see if they have anyone on staff that would be able to help with the set up. If you are buying your flowers from a local wholesaler, ask them if they know of someone who could assist. I know for a fact that a wedding coordinator would do this for you, however, if you're not hiring her for the rest of the day, it wouldn't be worth it to her. At any rate, I would try to get it done by an outsider rather than have your family and friends distracted with it.
