What to do about other reception sites

Hello,

My fiance and I just picked our reception site, after looking at several others. Should we send a formal "Thanks but no thanks" to the other reception sites that we made appointments with, and had representatives show us around.

Also, If this is the case, should I mail them a regret card, or is email OK?

You don't have to mail a formal card. A phone call, or a nice email saying 'thank you' for their time, showing you around, etc., would be very courteous, and greatly appreciated, I am sure.[;)]
