A while back I set an older friend of mine up with another friend of mine, and they ended up getting married. They are both college professors, and when we announced to them (before anyone else) that we were getting married, they said that they wanted to buy our rings to show their appreciation and also as our wedding gift. We had already ordered our rings (for both was $750-), but they insisted on letting them buy them. Is this a gift that is acceptable? My fiancee and I are having trouble deciding whether we can accept the gift, but we don't want to offend them either.

This is a personal decision, but you could allow them to give it to you. You could also discuss with them that you feel awkward with them spending so much on you. Perhaps you could even suggest for them to only purchase one of the rings. That may make them happy and help you feel better about it.
