head count for wedding caterer

My fiance' and I are having our wedding reception at a local country club that will provide our catering at 38.00 a person. The place is beautiful but for a guest list of 120 people this puts us way above our budget. We have gone through our list with a fine tooth comb to reduce the list but we're still confused. How many people should we actually include for a headcount for our caterer? The wedding is next November. We understand that the 120 guests does not include spouses, families, date, etc. One person on our list may bring his wife and daugther-- so we're not sure exactly how many people we should include for the caterer. Thanks.

I'm not sure I understand your question. You will invite only the number of guests you can afford to host. So, for example, if you're inviting Aunt Sue and Uncle John, that is two guests. If you are inviting their two children then that is two more guests. You will tell your caterer how many guests you have invited and then give them a final head count after the guests have responded to your invitation. The guests may not choose to bring additional guests, only those you specifically invite with their names included on the inner envelope. If you cannot afford to pay for 120 guests then you must go through your guest list again.
