I recently found a videographer I really like. We met with them and they are great! We saw a demo, asked questions, and are ready to hire them. The only problem is that they only accept checks. I was told this was a no-no in case something happens, I won't get my money back or be as "protected" as I would be if I used a credit card.
Is this something I should worry about?

To protect yourself, make sure the contract is specific as to your and their expectations, what is refundable and what isn't. Be sure to include clauses to cover their failure to cover the event, etc. Having a written contract provides you with a legal instrument, that can allow you to take the matter to small claims court should the need arise.
Remember: Most deposits are non-refundable because your booking the event ties up that "working weekend" for the service provider. If you cancel at the last minute, they don't have any work for that weekend because they have already turned down jobs to accommodate your event.
You may also want to ask your videographer about any problems their customers may have experienced in the past. "Have you ever had a couple that was not pleased with your work? If so, how did you handle? Did you refund their money, a portion of the bill?" Service industry professionals always have a couple of clients that feel they didn't get what they paid for. If your videographer answers yes, ask if you can speak with that past client. Remember: Sometimes things happen beyond the photographer or videographer's control, but it doesn't mean that they didn't try their best.
Before signing on the dotted line, ask to speak with past clients and listen to their experience. Ask to view actual wedding videos they have done, besides just a "demo". It may take more of your time, but you will be able to see what they can provide from start to finish.

Clients sometime tend to use their credit card as an escape hatch, so they don't have to pay for what they consider "inferior or below par services". Providing credit card payments can be costly to small businesses who work on small profit margins, as there is usually a monthly fee involved, in addition to up to 4% of the transaction going to the credit card company as "fees". We have found that clients are more apt to "cancel" their contract prior to an event if a credit card is involved.
