We are having a private destination wedding. Obviously we would like to celebrate with friends and family when we return. I have the larger family, living very south in England, whilst his family, my mum, and our friends are at the other end of Scotland. Is it best practice to hold two 'receptions', just one in the middle or just one at either end, most likely, Scotland?! I don't want to put people out, but if a bulk of people were to travel, my close knit family alone would be easier to organise than small family branches and lots of couples.

It really is your choice. If you host two receptions, the second would be the least formal. And, you would be responsible for all costs--plan well.
If it were me, I'd host just the one in Scotland. It is near your mother, his family, and all your friends. the rest of the family could choose to attend or no.

I like the idea of only hosting one reception. I'd try to make it somewhere in the middle so no one feels like they have been slighted. Just another way to think about it. There is no right or wrong answer here. Only you know your family and all of the personalities, plus the logistics.
Just know that many people have to plan to travel for weddings these days. I had to travel over 2 hours for my son's wedding and stay at a hotel for several nights.
