We are being given a Jack and Jill as opposed to a bridal shower or bachelor party. No one is expected to bring gifts to the Jack and Jill, so when and how would be an appropriate way to get the word out that we have a gift registry? Not everyone has email and the only invitations being mailed are the wedding invitations and I'm certainly not putting it in there!

You're correct not listing the wedding registry in your wedding invitation.
You should "get the word out" through close friends and family and tell anyone who asks. You can set up your own personal wedding website to list this registry and all of your other wedding information too. it's an affordable, helpful tool for wedding planning.
